Serves: 4–6
Ingredients
2 cups long-grain parboiled rice
1 onion, chopped
2 cloves garlic (optional)
1 red bell pepper
2 tomatoes or 1 can (400g) plum tomatoes
1 scotch bonnet (optional, for heat)
3 tbsp tomato paste
3 cups chicken stock
1 tsp thyme
1 tsp curry powder
1 bay leaf
½ tsp smoked paprika
Salt & pepper to taste
¼ cup vegetable oil, olive or avocado oil
1 tbsp butter
Instructions
Blend tomatoes, bell pepper, onion, garlic and scotch bonnet into a smooth puree.
Heat oil in pot; fry tomato paste for 3–5 mins until darkened.
Add blended mixture and cook 10 mins until thick and reduced.
Add spices, salt, and bay leaf.
Stir in washed rice and mix well to coat.
Add stock, cover tightly, and cook on low heat for 20–25 mins.
Add butter at the end, fluff rice gently, and serve warm.
