Ingredients
2 cups almond flour (or 1 cup almond + ½ cup coconut flour for lighter texture)
1 tbsp baking powder
½ tsp salt
5 large eggs
¼ cup melted butter or coconut oil
½ cup unsweetened almond milk
1 tsp apple cider vinegar
Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
In a bowl, whisk together almond flour, baking powder, and salt.
In another bowl, beat eggs, then mix in melted butter, almond milk, and vinegar.
Combine wet and dry ingredients; stir until smooth.
Pour into loaf pan and bake for 35–40 minutes, or until golden and a toothpick comes out clean.
Cool before slicing — it firms up beautifully as it cools.
