Shakshuka is one of those magical recipes where simple ingredients transform into something warm, vibrant, and full of flavour. Made with eggs gently poached in a rich tomato and pepper sauce, it’s a satisfying Middle Eastern and North African dish perfect for breakfast, brunch, or even a quick dinner. It’s hearty, healthy, and so easy to make — one pan, big flavour, and endlessly comforting.

Serves: 2–3
Ingredients
1 tbsp olive oil
1 onion, diced
1 red bell pepper, sliced
3 garlic cloves, minced
1 can (400g) chopped tomatoes
1 tbsp tomato paste
1 tsp paprika
1 tsp cumin
½ tsp chilli flakes (optional)
Salt & pepper to taste
4–5 eggs or as you like it
Fresh parsley or coriander to garnish
Instructions
Heat olive oil in a large pan. Sauté onions and peppers until softened.
Add garlic and cook for 1 minute.
Stir in tomatoes, tomato paste, paprika, cumin, chili flakes, salt & pepper.
Simmer 5–7 minutes until thickened.
Make small wells in the sauce and crack eggs into each space.
Cover and cook 5–7 minutes, or until eggs reach desired doneness.
Garnish with herbs and serve warm.
