It’s inspired by the trending carrot salad that’s taken social media by storm — but with a wholesome, low-carb twist. Perfect as a side, lunch, or light dinner, it hits that sweet spot between healthy and crave-worthy.

Ingredients
2 large carrots, peeled and grated
1 tbsp olive oil or avocado oil
1 tsp apple cider vinegar or lemon juice
1 tsp sesame oil (optional but delicious)
½ tsp honey or sugar-free substitute e.g. Erythritol (optional)
Salt & black pepper to taste
1 tbsp toasted sesame seeds or crushed nuts of your choice
Optional add-ins: thinly sliced cucumber, scallions, or fresh herbs (mint or parsley)
Instructions
In a bowl, whisk together olive oil, vinegar, sesame oil, and sweetener (if using).
Add grated carrots and toss until evenly coated.
Season with salt and pepper, then sprinkle with sesame seeds or nuts.
Chill for 10 minutes before serving for maximum crunch.
