Keto Chicken Salad (Simple, Fresh & Addictively Good)

This classic gets a low-carb makeover that’s full of flavour and crunch.
It’s creamy, herby, and perfect for meal prep — enjoy it in lettuce cups, on cucumber slices, or just straight from the bowl.

Ingredients
2 cups cooked chicken, shredded or diced
½ cup mayonnaise (or Greek yogurt for lighter version)
1 celery stalk, finely chopped
1 green onion, chopped
1 tsp Dijon mustard
1 tsp lemon juice
Salt & pepper to taste
1 tbsp chopped dill or parsley
Instructions
In a mixing bowl, combine chicken, celery, and green onion.
In a small bowl, whisk together mayo, mustard, lemon juice, salt, and pepper.
Pour dressing over the chicken and stir until evenly coated.
Sprinkle with dill or parsley and chill for 30 minutes before serving.
