Cauliflower Fried Rice (Better than Takeout)

Who says healthy can’t taste like your favourite comfort food?
This cauliflower fried rice as all the flavour of classic takeout — without the carb crash. It’s quick, colourful, and totally satisfying. Yes, I know it says "rice", but there's none in here, fear not!

Serves: 4
Ingredients
4 cups cauliflower rice (fresh or frozen)
2 tbsp sesame oil (or olive oil)
2 eggs, lightly beaten
1 cup mixed vegetables (peas, carrots, bell pepper)
2 cloves garlic, minced
3 tbsp soy sauce or Tamari
1 tbsp green onions, chopped
Optional: ½ cup cooked chicken or shrimp
Instructions
Heat 1 tbsp oil in a large skillet or wok. Scramble the eggs, then remove and set aside.
Add remaining oil and sauté garlic for 30 seconds. Add vegetables and cook 3–4 minutes until tender.
Stir in cauliflower rice and soy sauce. Cook 5 minutes, stirring often.
Add eggs (and optional chicken or shrimp) back in. Toss everything to combine.
Sprinkle with green onions before serving.
